Nothing quite says winter like a delicious warm soup, so we thought we would share one of our favourite Woolworths recipes with you! It’s a cheeky twist on an all-time classic and is sure to be a real crowd favourite with the kids and big kids alike.

Serves – 4
480g Pumpkin, cut into cubes
2 Small Brown Onions, quartered
5ml Olive Oil Cooking Spray
4 Cloves Garlic
1 Cup Salt-Reduced Vegetable Stock
2 Cups Lite Milk
2 Slices Wholegrain Sourdough Bread
½ Cup Shredded Mozzarella
¾ Cup Light Greek-Style Yoghurt
Preheat the oven to 220°C (200°C fan-forced). Grease and line 2 baking trays with baking paper. Place the pumpkin and the onion on 1 tray and lightly spray with oil. Wrap the garlic in foil and place on the same tray as the pumpkin and onion. Bake for 35 minutes or until the pumpkin and onion are golden brown around the edges.
Place the stock and the milk in a large saucepan over medium-high heat. Bring to a simmer, stirring occasionally. Remove the pan from the heat and add the pumpkin, onion and garlic. Using a stick blender, blend the mixture until smooth. Season with pepper to taste.
Place the sourdough on the remaining tray and sprinkle with mozzarella and season with pepper. Bake in the oven for 10 minutes or until the cheese and bread are golden brown. Remove the bread from the oven and cut the bread in half lengthways.
Divide the soup among the bowls, top with yoghurt and serve with the cheesy dippers. Enjoy!
